

This November, George’s cauliflower started growing really well. To the left you can see them under all the leaves!
We ended up giving around 7 heads away to family and friends and still had tons left over to put in the freezer.
Cauliflower Steak?
We even made some cauliflower “steaks” and put them in the freezer too. I am debating on putting them in an egg wash and maybe adding either panko or bread crumbs before baking. I’ve never breaded cauliflower before but a lot can be done with it, so we’ll see. I’ve steamed, stir fried, and baked them using herbs or parmesan. I’ve also made cauliflower rice before while on a keto diet. They do not taste like potatoes or rice but with enough seasoning, creams and butter, you can make them taste good albeit not so healthy!
Here is something I learned: apparently there is blanching in gardening.
Blanching is the practice of covering a part of the plant to block the sunlight which prevents chlorophyll production. So these huge cauliflower leaves can be tied or clipped together to keep the sunlight from turning the cauliflower yellow. George didn’t do that this time but said he would next time as some of them darkened a little even turning the edges a little purple in a few places.

Besides freezing them, we talked about how our mom’s used to add them when making pickles but with our heat, I am really not sure how we can grow the cucumbers and cauliflower at the same time. Perhaps our mom’s bought one or both from a market when making pickles. Who knows?
